Saykoh is a rare sake brewed using the yeast harvested from the flowers of the climbing rose. This yeast is used by only 30 breweries out of over 1400 breweries in Japan, with Saykoh being the only sake of the junmai daiginjo class. This yeast accounts for its very refreshing and refined taste.
